Bonjour! My name is Gilles, but you can call me Chef Gilou!!
I am here to help you cook, and eat your way to health.
Born in France, I became an apprentice cook at the age of 16.
Four years as an apprentice, two in a Traditional French Restaurant, and two more in a Gastronomic setting. These years and training taught me the basic cooking techniques and the base recipes needed to adapt to any style of cooking and build great meals.
After those four years, I decided to take my knowledge on the road. My 20's were all about travelling and cooking my way around this big and beautiful world. So far, I have been to 5 continents , 21 countries and lived in 16 different cities around the world.
Along my travels, I met and fell in love with my wife Melissa from Canada. Happily married since 2000, we are blessed with 2 amazing daughters.
So how does a French chef end up becoming a WILDFIT coach?
Well after 30 years in the food industry, the last 10 working for a corporation, I found myself burned out during the pandemic, and I lost my job.
Six dark months later and I decided that the years of abusing my body needed to change. Yes, it's true, chef's live a rock star lifestyle, only without the glam! I was left with a whole lot of suppressed exhaustion, joints that talked to me (not very nicely either), and a body that was very over weight, crying out for something new.
So on February 8. 2021 I started the Wildfit 90 day challenge.
Right from the very start I knew that this program was different. It is not based on a diet mentality, but on digging into the relationship I had to food, in order to achieve food freedom. I loved the group experience, the community was so supportive. I was inspired by the challenge, the changes that I was experiencing, and I loved that I was also able to inspire other participants during the challenge by sharing my new inspired WILDFIT recipes.
The next two years my focus is to become the healthiest version of me before I turn 50. It would be my pleasure to bring you along, and support you in achieving your personal health goals, and to encourage everyone to have fun in the kitchen.
As a certified Wildfit Coach and trained chef I believe that
my education, training, and the past 32 years of working in the hospitality industry all over the world, I am confident in holding space and inspiring you on your path to cooking healthy and seeing you achieve food freedom.
